Academic Experiences with Dining Services

University Housing Dining Services supports the academic mission through educational and experiential learning for students involved in a variety of interdisciplinary tracks. Throughout the academic year, Dining Services provides assistance for students who choose to make Dining initiatives and operations the subject of their project or source of their experiential experience. Specifically, there were 36 projects completed by students during FY16. Dining Services supported academic programs through providing a location and on-site instruction for FSHN340 Food Production and Service. Also, Dining Services supported three Grand Challenge courses: Interdisciplinary Pathways to Environmental Sustainability: From Farm to Table, and Fictions of Sustainability: Food Water, Energy (Part A & B) with lectures, demonstrations and hands-on opportunities. Dining staff were guest lecturers for five classes, including School of Earth, Society & Environment: Environmental Writing. Dining Services also participated in lecturing and providing an experiential component for International Students from Beijing University studying agriculture.
